Polyphenols in grape seeds contain polyphenols (GPS), mainly catechins and procyanidins. Catechins, including catechins, epicatechins and gallic acid esters, are the main monomers in grape seeds, as well as the constituent units of proanthocyanidins and oligomers.
There are rich oils in grape seeds, which account for 12% - 15% of the weight [3], and there are a lot of unsaturated fatty acids in the oil, among which linoleic acid content is between 58% - 78%.
